Must be stainless steel construction. Must have a spring assisted cover with an adjustable vent. Must be able to reach and hold =100 F to + 425 F temperature range. Must be a high efficiency heating system and ensure it is even distribution. Must have recessed controls and have four adjustable feet. Must have an anti-splash pouring lip. Must be 40-gallon capacity. Must be minimum 130,000 BTU. Must be electric spark ignition. Dimensions must be: 
48"WX37"O42 "H (69 "H with raised lid). Must be commercial grade equipment. Must have a 2" tangent draw off with perforated strainer. Must have a lip strainer. Must have a pan carrier. Must have a single pantry faucet with 48" spray hose. Must have a gas connections hose kit.
