Must be stainless steel construction. Must have a spring assisted cover with an adjustable vent. Must be able to reach and hold =100 F to + 425 F temperature range. Must be a high efficiency heating system and ensure it is even distribution. Must have recessed controls and have four adjustable feet. Must have an anti-splash pouring lip. Must be 40-gallon capacity. Must be minimum 130,000 BTU. Must be electric spark ignition. Dimensions must be: 
48"WX37"O42 "H (69 "H with raised lid). Must be commercial grade equipment. Must have a 2" tangent draw off with perforated strainer. Must have a lip strainer. Must have a pan carrier. Must have a single pantry faucet with 48" spray hose. Must have a gas connections hose kit. Vendor must deliver and unload equipment to the kitchen area inside building 240, complete installation of the unit to include connection and function check. Vendor must disconnect and remove existing equipment outside of the kitchen area to the east side of building 240.
